Chicken Cordon Bleu with Barber Foods

I have a con­fes­sion, sweet friends: I have a major weak­ness for bread­ed chick­en! Those that know me are well aware that I’ve been a big fan of chick­en ten­ders, nuggets and the like ever since I was a child and frankly, not much has changed since then! My fam­i­ly knows that one of my absolute favorite dish­es is chick­en cor­don bleu {a bread­ed chick­en stuffed with ham and cheese}, which I imme­di­ate­ly order when­ev­er I see it on the menu at restau­rants, though unfor­tu­nate­ly it isn’t very often. So you can imag­ine how super excit­ed I was to find out about the NEW Bar­ber Foods Stuffed Chick­en Breasts! There are three options avail­able: Cor­don Bleu, Broc­coli Cheese and Chick­en Kiev. Ummm… YUM!!!

Barber Chicken Cordon Bleu at Smith's

I head­ed to my local gro­cery store and was able to find the recent­ly redesigned pack­ag­ing of Bar­ber Food’s Chick­en Cor­don Bleu in the frozen food aisle. I decid­ed to pre­pare a din­ner for the fam to try to the brand new recipe, along with some side dish­es that would com­ple­ment it well. Because our week­days are extreme­ly busy between school and work and swim prac­tice and home­work, I set­tled on sim­ple, yet deli­cious oven-roast­ed aspara­gus and minia­ture pota­toes. The fam­i­ly absolute­ly LOVED it! And my chick­en-lovin’ daugh­ter was hooked! I have to say that the new recipe is much-improved, too! The out­er bread­ing is crispi­er and full of fla­vor, while the blend of Swiss and Amer­i­can cheese is per­fect and plen­ti­ful. See below for the step-by-step images and easy-to-fol­low recipe!

Chicken Cordon Bleu with Mini Roasted Potatoes & Roasted Asparagus

Cookin’ It Up with the NEW Bar­ber Foods’ Chick­en Cor­don Bleu !

Ingre­di­ents

  • NEW Bar­ber Foods Chick­en Cor­don Bleu {each pack­age con­tains 2} 
  • 2 table­spoons Extra vir­gin olive oil 
  • 3 tea­spoons of coarse salt 
  • 1/4 tea­spoon of fresh­ly ground pepper 
  • 1/4 tea­spoon of fine­ly chopped thyme 
  • 1/4 tea­spoon of fine­ly chopped rosemary 
  • 1 1/2 lbs. of mini/fingerling potatoes 
  • 1 lb. of asparagus

Instruc­tions

    For the Chick­en Cor­don Bleu: 
  1. Fol­low the instruc­tions on the box to prop­er­ly cook the bread­ed chick­en. Make sure you the chick­en is cooked to an inter­nal tem­per­a­ture of 165* exact­ly. Uti­lize a meat ther­mome­ter, if necessary. 
  2. For the roast­ed potatoes: 
  3. Pre­heat the oven to 400*F.
  4. Mix 1–2 tea­spoons of coarse salt, 1/4 tea­spoon of pep­per, 1/4 tea­spoon of thyme and 1/4 tea­spoon of rose­mary together. 
  5. Toss the scrubbed pota­toes in 1 table­spoon of extra vir­gin olive oil in a bowl. 
  6. Cov­er the pota­toes with the sea­son­ing mix­ture and arrange them in a sin­gle lay­er on a bak­ing sheet. 
  7. Roast the pota­toes for approx­i­mate­ly 25 min­utes, mak­ing sure they roast­ed nice­ly on the out­side and ten­der on the inside. 
  8. For the roast­ed asparagus 
  9. Chop the ends of the asparagus. 
  10. Toss the aspara­gus with 1 table­spoon of extra vir­gin olive oil. 
  11. Arrange the aspara­gus in a sin­gle lay­er on a bak­ing sheet, then sprin­kle some salt and pep­per over it. 
  12. Roast the aspara­gus for approx­i­mate­ly 7–8 min­utes, then re-arrange and turn the aspara­gus to roast for anoth­er 5 min­utes or so. 
  13. Serve all dish­es together!
