I have a confession, sweet friends: I have a major weakness for breaded chicken! Those that know me are well aware that I’ve been a big fan of chicken tenders, nuggets and the like ever since I was a child and frankly, not much has changed since then! My family knows that one of my absolute favorite dishes is chicken cordon bleu {a breaded chicken stuffed with ham and cheese}, which I immediately order whenever I see it on the menu at restaurants, though unfortunately it isn’t very often. So you can imagine how super excited I was to find out about the NEW Barber Foods Stuffed Chicken Breasts! There are three options available: Cordon Bleu, Broccoli Cheese and Chicken Kiev. Ummm… YUM!!!
I headed to my local grocery store and was able to find the recently redesigned packaging of Barber Food’s Chicken Cordon Bleu in the frozen food aisle. I decided to prepare a dinner for the fam to try to the brand new recipe, along with some side dishes that would complement it well. Because our weekdays are extremely busy between school and work and swim practice and homework, I settled on simple, yet delicious oven-roasted asparagus and miniature potatoes. The family absolutely LOVED it! And my chicken-lovin’ daughter was hooked! I have to say that the new recipe is much-improved, too! The outer breading is crispier and full of flavor, while the blend of Swiss and American cheese is perfect and plentiful. See below for the step-by-step images and easy-to-follow recipe!
Ingredients
- NEW Barber Foods Chicken Cordon Bleu {each package contains 2}
- 2 tablespoons Extra virgin olive oil
- 3 teaspoons of coarse salt
- 1/4 teaspoon of freshly ground pepper
- 1/4 teaspoon of finely chopped thyme
- 1/4 teaspoon of finely chopped rosemary
- 1 1/2 lbs. of mini/fingerling potatoes
- 1 lb. of asparagus
Instructions
- Follow the instructions on the box to properly cook the breaded chicken. Make sure you the chicken is cooked to an internal temperature of 165* exactly. Utilize a meat thermometer, if necessary.
- Preheat the oven to 400*F.
- Mix 1–2 teaspoons of coarse salt, 1/4 teaspoon of pepper, 1/4 teaspoon of thyme and 1/4 teaspoon of rosemary together.
- Toss the scrubbed potatoes in 1 tablespoon of extra virgin olive oil in a bowl.
- Cover the potatoes with the seasoning mixture and arrange them in a single layer on a baking sheet.
- Roast the potatoes for approximately 25 minutes, making sure they roasted nicely on the outside and tender on the inside.
- Chop the ends of the asparagus.
- Toss the asparagus with 1 tablespoon of extra virgin olive oil.
- Arrange the asparagus in a single layer on a baking sheet, then sprinkle some salt and pepper over it.
- Roast the asparagus for approximately 7–8 minutes, then re-arrange and turn the asparagus to roast for another 5 minutes or so.
- Serve all dishes together!
Looks delicious, right?! Trust me… it is!!! You can even add some Hollandaise sauce over the asparagus for additional flavor and presentation.
